For example use a look up table or code list to convert a value within an element to a code?

Example: 
Name = ABC Company
Convert to :  123456
Error Message
Defect Number
Enhancement Number
Cause
Resolution
There is not a built-in option within the XMLConverters product that will allow the user to convert one specific element to a code.

The only option is to do it for everything that has a codelist.
